Salsa with a Twist.

It seems I've been completely taken with food/recipes lately, but there's reason to my madness. Everything is growing! Fresh produce has arrived! It makes me happy. I'm easily pleased, I guess.

 It's fresh salsa season! I'd originally planned to use my fresh White Peaches to make a Crostata, however, in my house making a single-serve amount of anything is paramount to mutiny or something. I opted instead to please the masses, and I'll retire to my closet bedroom to consume my chocolate in peace after my sweet ones have gone to bed. (They can smell it, they really can!) Salsa, with a sweet twist, seemed right up our ally. We love chips and salsa. I realize now that I should have doubled this recipe because once they tasted it (after I got my fill), it was gone. This would be amazing with some salmon.
 White peaches have a noticeably more subtle flavor than yellow peaches. Wheras yellow peaches can have a bit of a tangy bite to them, the white peaches are subtly sweet with almost a flowery essence to their flavor. It's great for matching up with other flavors like ginger, or tart berries.

 I matched mine up with some Beef Steak tomato, and some fresh corn straight off the cob.

This salsa will definitely be a staple during the summer, as long as fresh peaches are available. 

 Here is the recipe.

White Peach & Corn Salsa

2 small White Peaches, diced
1 large Beef Steak tomato, seeded and diced
1ear of fresh Corn, cleaned and cut from the cob
1/4 cup of Red Onion, diced
Juice of half a Lemon
1 tsp Cilantro, minced
1/4 tsp Chili Powder
1 tsp Honey
Salt and pepper to taste

Combine all the ingredients in a bowl. Best eaten the same day, chilled. Refrigerate until used.
