Spice Pumpkin Oatmeal with Cranberries

When I took my kids to the pumpkin patch to pick out pumpkins before Halloween, I didn't anticipate that I'd then be using them for something else entirely! Oh, sure, we carved them but that's not all.

We couldn't leave them outside because anything edible attracts a crazy amount of ants. And we've recently been trying to escape an infestation of yellow jackets that also flock to anything that smells tasty. (Us included!) 
So once they were carved, and the kids enjoyed them for a day or so, I cut them up and cooked them, and pureed them to use. I ended up with a lovely amount of pumpkin puree in my refrigerator! This super yummy oatmeal is what I came up with one morning when I was searching out something other than cold cereal or toast for breakfast.

 You'll want to add all of these ingredients to a pot and add 1 cup of water. Berries included! (If you aren't fond of the tartness of fresh cranberries, you could use dried. )

 Stir everything together, and bring to a simmer over medium heat. Stir occasionally. Cook about 10 minutes, or until the oatmeal is cooked. The berries will pop as they cook, so be aware of that!

I've tried this recipe with white sugar as well, and that was quite tasty also.
It's really yummy and filling! And pretty healthy to boot.
