One cucumber, seeded and chopped
Half a red onion, chopped
1 15 oz can of Chickpeas
A few sprigs of mint, roughly chopped
Sea Salt to taste
2 tblsp Apple Cider Vinegar
4 tblsp Olive oil
A pinch of sugar
Toss together all your veggies in the bowl, including the mint. In a small jar add your vinegar, olive oil and sugar, and shake until it's mixed! Pour your vinaigrette over your salad and add salt to taste. The flavors meld together well if you let them sit in the fridge for a few hours. It's even better the next day.
This is also great served over a green salad, or even over couscous or quinoa!
