You know what I'm going to say, don't you?
Yet again, there I was, standing in front of the fridge wondering what to eat for lunch.
I've been known to make myself something to eat, only to have one of my little ones snatch it right out of my fingers. Sometimes I figure if I just go for the leftovers maybe they won't steal my food. Nope. They take that, too. Honestly, I don't get that. It would never have crossed my mind to do that when I was a child. Now it makes me think of those Wild Life shows on tv where you see the mother snap at the baby for trying to taker her food or for nibbling at her tail or something. Not, that I would do that...but I can see how they feel the need to. Children will snatch things right out from under your nose!
Funny enough I went to the fridge and looked for the oddest combination of foods I could find in there in hopes that I'd have some lunch to myself. I could secretly just sit in my bathroom and nibble on my homemade pickles, and radishes that I didn't know what to do with.
I googled the things I pulled out of the fridge and what do you know...I got a hit!
Here is a link to the Recipe at Food 52. I was ecstatic that it was a chicken salad, too. I could eat chicken salad every day of the week.
This recipe is really different, but I liked the combination. Unfortunately, it didn't hinder my young one from taking a huge heaping mouthful when I looked away. But he left enough that I could make a sandwich.
Since I first made this recipe a couple of weeks ago, I've made it again but I piled it high on top of some mixed greens and had it as a salad. It's really good that way too.
I was pretty happy to get to use some of my homemade pickles too. I made two jars, and the kids ate one jar all in one fell swoop. Human vacuums, I tell you. Homemade pickles, by the way....Oh my goodness. So delicious, and so easy to make. You've got to try it. You'll thank me later, I promise!
